Ingredients
For the Pasta:
- 12 oz pasta (penne or fettuccine)
For the Sauce:
- 2 tablespoons olive oil
- 1 lb chicken breast (sliced)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 1 yellow bell pepper (diced)
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Chopped green onions or parsley (for garnish)
Preparation
1. Cook the Pasta:
Cook the pasta according to package instructions. Drain and set aside.
2. Sauté the Chicken:
In a large skillet, heat olive oil over medium heat. Add the sliced chicken breast and cook until browned and fully cooked. Remove and set aside.
3. Add Vegetables:
In the same skillet, add onion, garlic, and yellow bell pepper. Sauté until softened.
4. Make the Sauce:
Lower the heat and add Cajun seasoning, heavy cream, and Parmesan cheese. Stir until the cheese melts and the sauce thickens.
5. Combine:
Add the cooked pasta and chicken back into the skillet. Toss to coat everything in the creamy sauce.
6. Serve:
Garnish with chopped green onions or parsley and enjoy!
